Slow-roasted pork, crusted in za'atar, becomes tender, perfect when served with cumin roasted carrots & tzatziki. Soak everything up with locally-sourced pita.
Remove cover & set aside toppings and pita.
Cover with foil & heat at 325º F for 10-16 minutes.
Heat on high for 2 minutes, stir, & repeat if necessary.
Add toppings as desired and warm pita.
